This past weekend S and I ran in a 5K trail run up in Marin. We had a great time and both finished under 30 minutes! S had never run a race before, and hadn't run more than 3 miles in about 8 years, so this was a huge accomplishment for him! After our race, we decided to invite a few friends over to our apartment for a celebratory brunch. We made french toast, bacon, fruit salad, pumpkin chocolate chip muffins, an egg/french bread/soysauge casserole and homemade hash browns! We had a great time and did an impressive amount of eating. And since mo meal is complete without dessert, I decided to try out a new recipe I found on pinterest. The recipe was adapted from this one:
http://www.bakedperfection.com/2008/06/peanut-butter-cup-cookies.html
We didn't have a mini-muffin tray (which is what this recipe called for) so we just used a regular sized muffin tray, made small, ball sized drops of cookie and baked them inside the larger muffin tray so our cookies turned out round and flat vs. cupcake-y.
with your final, deeeelicious cookie looking a little something like this
All in all, these cookies were really easy to make and so good! Big hit at our brunch & at S's office too (my dumping ground for all sweets that are too good to keep in our apt, especially less than a week before we leave for Hawaii)
