lunch

I had to share this recipe really quickly, it's that amazing!

I'm very fortunate to be working from home currently, as the convenience of a full kitchen does wonders for week day lunches. Today we didn't have much in the house, so I decided to be somewhat creative and use a combination of the following:

1 can chickpeas
penne pasta
asparagus (as many stalks as you like, cut into 2 inch pieces)
shredded parmesan cheese
garlic

I boiled water and before I put the pasta in, I boiled the cut up asparagus for approx 3 minutes.
On another burner, I put minced garlic in a pan with olive oil to start browning.

After approx 3 minutes, I used a strainer to scoop the asparagus out of the boiling water and put it in the pan with the browned garlic.

I put the pasta in the leftover asparagus water & boiled to completion

while the pasta was cooking I continued to cook the asparagus with the garlic & olive oil (on low) and near the end of the asparagus & pasta cooking, I added some chickpeas to the pan with the asparagus & garlic. I added some sea salt & pepper to the pan with the asparagus, chickpeas and garlic and voila!




I sprinkled the final creation with a little parmesan cheese and it is absolutely delicious, if I do say so myself.
